Ingredients

  • For the apples:
  • 1.2 kg apples (mix of Granny Smith and Honeycrisp), peeled, cored, cut into 2 cm chunks
  • 2 tbsp fresh lemon juice
  • 80 g brown sugar
  • 1 tbsp cornstarch
  • 1 1/2 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • 1/4 tsp salt
  • 1 tsp vanilla extract
  • For the crumble topping:
  • 150 g all-purpose flour
  • 120 g old-fashioned rolled oats
  • 150 g brown sugar
  • 1/2 tsp ground cinnamon
  • 1/4 tsp salt
  • 180 g cold unsalted butter, cubed
  • To serve:
  • Vanilla ice cream or lightly whipped cream

Instructions

    Preheat the oven to 190°C / 375°F. Butter a 23 x 33 cm baking dish.

    In a large bowl, toss the apples with the lemon juice, brown sugar, cornstarch, cinnamon, nutmeg, salt and vanilla until well coated. Tip into the prepared dish and spread evenly.

    For the crumble, whisk the flour, oats, brown sugar, cinnamon and salt in a bowl.

    Add the cold butter cubes and rub them into the dry ingredients with your fingertips until the mixture forms big buttery clumps — some pea-sized, some larger. Do not overwork.

    Scatter the crumble evenly over the apples, letting some pieces stay as big lumps.

    Bake for 40–50 minutes, until the topping is deeply golden and the apples are bubbling around the edges.

    Let rest for at least 15 minutes so the filling can set. Serve warm with vanilla ice cream.
