Introduction

Sheet pan dinners get called "lazy cooking" and that's fine by me. This is the one I make when the fridge is running low and I don't want to think. The chicken thighs roast on top of baby potatoes so all the schmaltz drips down and crisps the potatoes underneath — free flavor. Bright cherry tomatoes burst in the last few minutes and turn into a sort of pan sauce. Serve it with a big salad on the side — the mediterranean chickpea salad or a Greek village salad go beautifully with the citrus and herbs here.

Ingredients

  • 1.2 kg bone-in, skin-on chicken thighs (about 6)
  • 700 g baby potatoes, halved
  • 300 g cherry tomatoes, on the vine if possible
  • 1 lemon, sliced into rounds, plus juice of another lemon
  • 4 garlic cloves, smashed
  • 4 sprigs fresh rosemary
  • 6 sprigs fresh thyme
  • 3 tbsp olive oil, divided
  • 1 tsp sweet paprika
  • 1 tsp dried oregano
  • Salt and freshly ground black pepper

Instructions

    Preheat the oven to 220°C / 425°F.

    In a small bowl, mix 2 tbsp olive oil with the paprika, oregano, lemon juice, a big pinch of salt and pepper. Rub the mixture all over the chicken thighs, getting some under the skin.

    Toss the halved potatoes on a large rimmed sheet pan with the remaining tablespoon of olive oil, salt and pepper. Spread in a single layer.

    Nestle the chicken thighs skin-side up on top of the potatoes. Scatter the smashed garlic, rosemary and thyme sprigs, and lemon slices around the pan.

    Roast for 30 minutes, until the chicken skin is golden and the potatoes are beginning to color.

    Add the cherry tomatoes to the pan and roast for another 10 minutes, until the tomatoes have burst and the chicken registers 74°C / 165°F at the thickest part.

    Let rest for 5 minutes, then serve straight from the pan with all the juices spooned over.

Tips from our kitchen

  • Cut the potatoes to a uniform size (halves are fine for small potatoes, quarters for medium) so they cook evenly.
  • If the chicken skin isn't as crisp as you'd like at the end, run the broiler for 2 minutes — watch it closely.
