Ingredients

  • 700 g baby carrots (or regular carrots cut into 5 cm sticks)
  • 3 tbsp unsalted butter
  • 3 tbsp honey
  • 1/2 cup water or chicken stock
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tbsp fresh thyme leaves
  • 1 tbsp fresh lemon juice
  • Flaky sea salt, to finish

Instructions

    Melt the butter in a large skillet over medium heat. Add the carrots, honey, water or stock, salt and pepper. Stir to coat.

    Bring to a simmer, then cover and cook for 8–10 minutes, until the carrots are just fork-tender.

    Remove the lid and continue to cook over medium-high heat for another 8–10 minutes, tossing occasionally, until the liquid has reduced to a sticky glaze and the carrots are caramelized in spots.

    Off the heat, stir in the thyme and lemon juice.

    Transfer to a serving dish and finish with flaky sea salt.

Tips from our kitchen

  • Use real honey, not honey "syrup" — the flavor comes through much better.
  • If your carrots vary in size, cut them so they're uniform. Uneven pieces cook unevenly.
