Fragrant Thai Green Curry with Chicken

Ingredients
- •600 g boneless chicken thighs, cut into bite-size pieces
- •3–4 tbsp Thai green curry paste
- •400 ml full-fat coconut milk
- •200 ml chicken stock
- •1 small Thai eggplant or 1/2 regular eggplant, cubed
- •150 g bamboo shoots, drained
- •1 red chili, sliced (optional)
- •1 tbsp fish sauce
- •1 tsp palm sugar or brown sugar
- •A handful of Thai basil leaves
- •1 lime, cut into wedges
- •Jasmine rice, to serve

Open the can of coconut milk without shaking it. Spoon the thick cream on top into a wide pan and heat over medium until it starts to split and turn glossy, about 3 minutes.

Add the green curry paste and fry for 2 minutes, stirring constantly, until fragrant.

Add the chicken and toss to coat in the paste. Cook for 4–5 minutes until lightly sealed.

Pour in the rest of the coconut milk and the stock. Bring to a gentle simmer.

Add the eggplant and bamboo shoots and simmer uncovered for 10–12 minutes, until the chicken is cooked through and the sauce has thickened slightly.

Season with fish sauce and sugar, then taste and adjust — it should be balanced between salty, sweet, and savory.

Stir in the Thai basil and sliced chili.

Serve over steaming jasmine rice with lime wedges on the side.
