Introduction

Beef and broccoli is the takeout dish I never got over. Making it at home, though, is quicker than delivery — 20 minutes, one pan. The two secrets are treating your beef like it matters (thin slices against the grain, quick marinade with cornstarch to keep it tender) and getting the pan properly ripping hot before anything touches it. Steamy pan equals gray beef. Screaming hot pan equals restaurant-style char. Pair it with a bowl of tom kha gai or a fragrant Thai green curry when you want a full Asian-inspired spread.

Ingredients

  • 500 g flank or sirloin steak, sliced thin against the grain
  • 1 tbsp cornstarch
  • 1 tbsp soy sauce (for marinade)
  • 500 g broccoli, cut into small florets
  • 3 tbsp vegetable oil, divided
  • For the sauce:
  • 3 tbsp soy sauce
  • 2 tbsp oyster sauce
  • 1 tbsp brown sugar
  • 1 tbsp rice vinegar
  • 1 tsp toasted sesame oil
  • 1 tbsp cornstarch mixed with 3 tbsp water
  • 3 garlic cloves, minced
  • 1 tbsp fresh ginger, grated
  • 2 green onions, sliced
  • Sesame seeds and steamed jasmine rice, to serve

Instructions

    Toss the sliced beef with the cornstarch and 1 tbsp soy sauce. Let sit for 10 minutes while you prep everything else.

    Whisk all the sauce ingredients together in a small bowl and set aside.

    Blanch the broccoli in salted boiling water for 90 seconds, then drain and rinse under cold water to stop the cooking.

    Heat 2 tbsp oil in a wok or large heavy skillet over the highest heat until smoking. Add the beef in a single layer and sear for 1 minute without stirring, then toss until just cooked through, about 1 more minute. Remove to a plate.

    Add the remaining tablespoon of oil to the pan, then the garlic and ginger. Stir for 15 seconds until fragrant.

    Add the broccoli and toss for 1 minute. Return the beef to the pan.

    Pour in the sauce and stir constantly for 30–60 seconds, until it thickens and coats everything glossily.

    Scatter with green onions and sesame seeds. Serve immediately over jasmine rice.

Tips from our kitchen

  • Slice the beef against the grain and thin — 3–4 mm. Freezing it for 20 minutes first makes clean slicing much easier.
  • Have everything prepped and next to the stove before you start. Stir-fries are fast and unforgiving.
