Pour the wet ingredients over the dry and fold gently with a spatula until just combined. The batter should be thick and slightly lumpy — do not overmix.

Let the batter rest for 5 minutes while you heat a non-stick skillet over medium-low heat.

Lightly butter the pan, then scoop 1/3 cup of batter per pancake. Cook until bubbles form across the surface and the edges look set, about 2–3 minutes.
