Introduction

Overnight oats are the breakfast I fall back on every busy week. The oats do all the work while you sleep — softening in milk, thickening with chia, and picking up the flavor of whatever fruit and sweetener you throw in. In the morning you just stir, top, and go. Once you've got the base ratio memorized, you can riff on it forever: cocoa and banana, almond butter and jam, mango and coconut, apple pie. This berry version is the one I keep coming back to.

Ingredients

  • 1 cup rolled oats (old-fashioned, not instant)
  • 1 1/4 cups milk of choice (dairy, oat, or almond)
  • 1/2 cup plain Greek yogurt
  • 2 tbsp chia seeds
  • 2 tbsp honey or maple syrup
  • 1/2 tsp vanilla extract
  • Pinch of salt
  • 1 cup mixed fresh berries (blueberries, raspberries, strawberries)
  • Optional: sliced banana, chopped nuts, coconut flakes

Instructions

    In a medium bowl or a large jar, stir together the oats, milk, yogurt, chia seeds, honey, vanilla, and salt until fully combined.

    Divide between two jars or airtight containers, leaving a couple of inches of headroom.

    Cover and refrigerate for at least 6 hours, ideally overnight.

    In the morning, give the oats a good stir. If they're thicker than you like, splash in a little extra milk.

    Top with fresh berries, sliced banana, and a scatter of nuts or coconut. Drizzle with a touch more honey if you like it sweeter.

Tips from our kitchen

  • Old-fashioned rolled oats give the best texture. Steel-cut stay too chewy overnight; quick oats turn to paste.
  • Prep four jars on Sunday for a week of grab-and-go breakfasts. They keep for up to 4 days.
