Shakshuka with Feta and Fresh Herbs
Eggs gently poached in a rich, smoky tomato and pepper sauce, topped with feta and herbs. A one-pan breakfast that works just as well for dinner.

Introduction
Shakshuka is one of those dishes that earns its place on your weekly rotation almost immediately. It uses pantry staples, comes together in one pan, and looks dramatic enough on the table to serve to guests. I make it for slow weekend breakfasts, and on weeknights when I'm out of ideas and have eggs in the fridge. Ingredients
- •2 tbsp olive oil
- •1 large yellow onion, finely diced
- •1 red bell pepper, diced
- •4 garlic cloves, minced
- •1 tsp sweet paprika
- •1 tsp ground cumin
- •1/2 tsp smoked paprika
- •Pinch of chili flakes (optional)
- •1 can (800 g) whole peeled tomatoes
- •1 tsp sugar
- •Salt and pepper to taste
- •4–6 large eggs
- •100 g feta cheese, crumbled
- •A handful of fresh parsley and cilantro, chopped
- •Crusty bread to serve

Heat the olive oil in a wide skillet over medium heat. Add the onion and bell pepper and cook until soft and golden, about 8 minutes.

Add the garlic, sweet paprika, cumin, smoked paprika, and chili flakes. Cook for 1 minute until fragrant.

Tip in the tomatoes, crushing them with a spoon. Add the sugar and a pinch of salt. Simmer for 10–12 minutes, until the sauce thickens.

Make small wells in the sauce with the back of a spoon and crack an egg into each. Season the eggs with salt and pepper.

Cover and cook over low heat for 6–8 minutes, until the whites are set but the yolks are still runny.

Scatter the feta and herbs over the top and serve straight from the pan with plenty of crusty bread for dipping.

- For a richer version, swirl in a spoonful of plain yogurt or cream just before serving.
