Fluffy Spinach and Mushroom Omelette

Ingredients

- •1 tbsp butter, divided
- •80 g cremini or button mushrooms, sliced
- •1 small garlic clove, minced
- •A big handful of baby spinach
- •30 g grated Gruyère or sharp cheddar
- •1 tbsp finely chopped chives
- •Salt and freshly ground black pepper

Melt half the butter in a small non-stick skillet over medium-high heat. Add the mushrooms and a pinch of salt and cook, undisturbed for 2 minutes, then toss until golden, about 4 minutes total.

Add the garlic and spinach and cook until just wilted, about 30 seconds. Slide onto a plate.

Whisk the eggs with a pinch of salt and pepper until fully blended, no streaks of white left.

Wipe the pan clean, return to medium heat and melt the remaining butter, swirling to coat.

Pour in the eggs. Using a rubber spatula, drag the edges toward the center while tilting the pan so uncooked egg runs into the gaps. Do this for about 45 seconds, until the top is just barely set but still glossy.

Scatter the cheese and the mushroom-spinach mixture over one half of the omelette. Fold the empty half over the filling, slide onto a plate, and finish with chives and a crack of black pepper.
Tips from our kitchen
- Use a non-stick or well-seasoned pan sized about 20 cm / 8 inches — anything bigger and the eggs spread too thin.
- Pull the pan off the heat while the top still looks a touch underdone. Residual heat finishes the eggs perfectly.
